Similarly to good Prosecco wines, it’s made using the charmat method, during which the secondary fermentation takes place in tanks. The wine is bottled directly after, retaining more of the fresh flavors of the grape more than a tradtitional sparkling wine does, and has softer bubbles to match.
A 50/50 blend of Chardonnay and Pinot Noir grapes, aged on the lees for 6 months and bottled with 6,2g dosage. Citrus and lots of tropical fruit on the palate, matched with a hint of fine chalky, yeasty flavors.
